Be versatile - use blueberries, strawberries or raspberries. Even try bananas.
Yield: 4 to 5 servings

1 | cup | soymilk (vanilla or plain) | |

3-4 | tablespoons | cultured Soy (vanilla or plain) (optional) | |
|
|||
1 | cup | flour | |
|
|||
2 | tablespoons | cornstarch | |
|
|||
1 | tablespoon | baking powder | |
|
|||
1/4 | teaspoon | baking soda | |
|
|||
2 | tablespoons | honey | |
|
|||
2 | tablespoons | oil | |
|
|||
3/4 | cup | blueberries | |
|
Beat the eggs and soymilk in a mixing bowl. Add flour, cornstarch, baking powder, baking soda, honey and cultured soy. Beat well.
Then stir in the blueberries and the oil. Cook on a hot griddle.
You can substitute blueberries for any other fruit you like (bananas, strawberries, raspberries, etc.).
