2 | eggs | ||

3 | over-ripe bananas, peeled, then mashed | ||

1/4 | cup | canola oil | |
|
|||
1/4 | cup | water | |
|
|||
1 1/2 | cups | banana nut crunch cereal | |

Preheat oven to 350 degrees F
Spray 9 x 5- inch loaf pan with nonstick cooking spray.
Mix flour, sugar, baking powder, baking soda and salt in large bowl.
Beat eggs in small bowl; stir in bananas, oil and water. Add to flour mixture; stir just until moistened. Batter will be lumpy. Stir in cereal.
Pour batter into prepared pan. Bake for 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes before removing from pan. Cool completely before slicing.
