The perfect side dish to chicken, lamb or pork.
Yield: Makes 4 to 6 servings.
1 | can | (20-ounce) Dole Pineapple Chunks, in syrup | |

2 | tablespoons | soy sauce | |
|
|||
1 | teaspoon | grated fresh ginger root | |
|
|||
2 | cups | water | |
|
|||
1 | cup | long-grain brown rice | |
|
|||
1/2 | teaspoon | rosemary | |
|
|||
2 | tablespoons | butter | |
|
|||
2 | tablespoons | chopped green onion | |
|
|||
1/4 | cup | toasted slivered almonds | |
|
Drain pineapple syrup into saucepan. Add water and bring to boil. Stir in rice and rosemary. Cover and simmer 35 to 45 minutes, until rice is tender and liquid is absorbed. Mix in pineapple chunks and remaining ingredients and heat through.
