4 | teaspoons | olive oil, divided | |
|
|||
2 | teaspoons | kosher salt | |
|
|||
2 | teaspoons | freshly ground beef black pepper | |
|
|||
Garlic Citrus Chimichurri: | |||
1/3 | cup | cilantro leaves | |
|
|||
1/4 | cup | fresh Italian parsley leaves | |
|
|||
1/4 | piece | jalapeno, seeded | |
|
|||
1 | tablespoon | minced garlic | |
|
|||
2 | teaspoons | fresh oregano leaves | |
|
|||
5 | tablespoons | olive oil | |
|
|||
1 | teaspoon | lemon juice | |
|
|||
1 | teaspoon | lime juice | |
|
|||
1 | teaspoon | orange zest | |
|
|||
1/4 | teaspoon | salt | |
|
|||
1/4 | teaspoon | freshly ground black pepper | |
|
Preheat grill on high. Rub each steak with 1 teaspoon olive oil; sprinkle with salt and pepper.
Garlic Citrus Chimichurri:
In a food processor bowl, pulse cilantro, parsley, jalapeno, garlic, oregano, olive oil, lemon juice, lime juice, orange zest, salt and pepper until combined.
GRILLING TIP TIP:
Prepare grill (charcoal or gas) according to manufacturer's directions for medium heat. To check temperature on a charcoal grill, cautiously hold the palm of your hand above the coals at cooking height. Count the number of seconds you can hold your hand in that position before the heat forces you to pull it away, approximately 4 seconds for medium heat.
